font-size:22px;"> 和尚頭小麥的麥穗無芒，故名和尚頭。它的特點是極耐旱，但產(chǎn)量低，面粉筋骨大，和面時比較費勁，口感好，有特殊的面香味。做拉面不用放任何添加劑，一根就能拉出一碗。（現(xiàn)在各地的“蘭州拉面”，都是放了化學(xué)“拉面劑”或者"蓬灰液"的，也有相當部分還沿用傳統(tǒng)，放的是水蓬草燒成灰的灰水，相比化學(xué)“拉面劑”來說，也算是“綠色”的了。）</b></h1><h1><b style="color:rgb(255, 138, 0); color:rgb(57, 181, 74);"> 明代以前，蘭州地區(qū)種植小麥，僅限于市區(qū)近郊。而蘭州城北廣大地區(qū)，即現(xiàn)在永登秦王川、皋蘭、景泰等地，景泰的主種區(qū)為寺灘鄉(xiāng)。這里降水多集中在7月、8月、9月，占年降水量的80%。相對濕度平均為54%，絕對濕度為6.6毫巴，干燥度為1.89，干旱是影響農(nóng)業(yè)生產(chǎn)的主要災(zāi)害性天氣。</b></h1><h1><b style="font-size:22px;
